とり天
私は以前、大分は別府に3年住んだことがあります。JR別府駅の到着時のアナウンス「べっぷ~~~ぅ、べっぷ~~~ぅ、べっぷ~~~ぅ。 ・・・ べっぷです。」というのが忘れられません。

他の人はなんでもないことなのかもしれないけど、なぜか私と夫はばかウケしていました。べっぷ~~ぅと伸ばすところは昔の観光地・温泉地のニオイをかもし出すレトロな感じなアナウンスなのです、で続く「別府です」はめちゃくちゃプレーンに普通に言い切っちゃう。 合成音声なのだろうけれど、その一瞬の微妙な切り替えがツボにはまっていました。しかも初めて聞いたときは最初のべっぷ~~でず~~っと永遠に言い続けるのか?という気さえして、最後の言い切りべっぷを聞くまでちょっとどきどきしたなぁ。 懐かしいなぁ。
I have been living in Beppu, Oita prefecture for 3 years. I remember the announce at Beppu station when a train arrives. “Beppu~~~~, Beppu~~~~~,Beppu~~~~… Here is Beppu.” Maybe other people don’t feel anything about this, but my husband and I think this is really funny. I think we’d rather love this than think funny, actually. First 3 calling Beppu~~~ make us feel a kind of nostalgic like being in a very old historic hot spring town, then one very clear plain calling Beppu follows. The last one is really plain and a kind of businesslike. We enjoy this mismatching.
When I heard this announce for the first time, I worried that they would continue that long calling forever. So when I heard that clear calling at last, I felt relieved. Well, silly me.

これは大分の郷土料理(と思う)、”とり天”です。
私は実際に作り方を習ったわけではなく、食べたものを見よう見まねで作ったので果たして「これが”とり天”です!」と言い切っていいやら・・・? しゅみません。<(_ _)> でもこんな感じです。作り方はいたって簡単。細く切った鶏の胸肉あるいはもも肉を酒と塩で下味をつけ、天ぷらのたねをつけてあげる。そう、鳥の天ぷらです。ポイントは鶏を細く切ることと、食べるときに酢醤油とからしをつけていただくこと。 この2点がけっこう私には目からうろこでした。私が大分の人に食べに連れて行ってもらった別府のマーチという喫茶店ではもっともっと鶏を細くしてあって、まるでサッポロポテトのようでした。サッポロポテトが山盛りでてきたって感じで、「え~?こんなに食べられな~い」なんてぶりっ子してたらあれよあれよとぱくぱくと完食。細切りで衣をつけるのでかさが増えるのだけれど、実際はそうでもない量なのですな。(ということにしておこう) 天ぷらに酢醤油とからしという組み合わせも、シンプルながらとり天を食べるまで気付いたことがありませんでした。これが酢醤油とからしで食べるので、あっさりとしてどんどんいけてしまいます。 でも見た目かさが増えるので、ちょっとの鶏肉でも見栄えあるおかずになるっていうのも主婦の見方?かも。
This is “TORI TEN”, which is Oita’s special dish. (I guess)
I have never been taught how to make this, and I just figure out by believing my tongue, which is not trustful, so I should not say, “this is Tori Ten” out loud. Let me say, “This is TORI TEN style dish”. It is really easy to make. Cut chicken thinly like 1 inch or less, and put salt and sake on them. Prepare Tempura batter(flour, Japanese soup stock powder, a little of sugar and salt and a egg). Heat oil in a deep pan and dip chicken into the batter and fry. When you eat them, dip Tori Ten in vinegar mixed soy source and Japanese mustard as you like. That’s it. The point is cutting chicken thinly and use vinegar and soy source mix for dipping source. I had never thought Tempura with vinegar mixed soy source. This is not the surprisingly unique combination, but it had not come to my mind until I met Tori Ten. When I had Tori Ten for the first time in Beppu, colleagues of my part time job took me to the café they love for Tori Ten, “March”. They made Tori Ten much thinner than mine, like pencil thin fried potato, and served heaped up in a dish. At first I thought I couldn’t eat that much, but it was really easy to eat them up! Because they used very thin slices of chicken, it made them look really bulky when they made Tempura with them. It means we can make Tori Ten with very small amount of chicken, it can help our everyday budget.
